|Prep Time: 10 minutes||Cook Time: 20 minutes||Serves: 2|
|2||Western Grassfed Beef New York Striploin Steaks|
|2 tbsp||Coarse ground black pepper|
|2 tbsp||Garlic powder|
|1 tbsp||Coarse salt|
|Ghee or olive oil|
|1 cup||Wild mushrooms, chopped|
|1 1/2 tbsp||Rainbow chard, shredded by hand and rinsed|
|Salt and pepper|
Heat a cast iron pan over medium high heat. Allow to heat up – you want it hot to sear your New York striploin steaks.
Combine the garlic powder, salt, and pepper in a shallow dish.
Add a bit of cooking fat (ghee or olive oil) into the pan.
Coat both sides of the steaks with the seasoning mix and press it to get it to stick.
Add the New York steaks to the pan. Do not mess with them!
Allow the steaks to sear on each side for 4 minutes – for medium rare. 5-6 minutes for medium, and 6-7 minutes for more well-done.
Take the steaks out of the pan and allow to rest for 10 minutes while you cook the vegetables.
Heat a bit more cooking fat in the pan (ghee or olive oil), turning the heat down to medium.
Add in the mushrooms and allow to sauté for 2-3 minutes until beginning to softened.
Add in the rainbow chard and season the mixture with salt and pepper.
Sauté the veggies for another 2-3 minutes until the chard softens.
Plate the vegetables with the steak on top.
