With these ideas you can create a great steak seasoning rub that will have your guests asking for more!
Picking a theme.
With every entrée, there is a theme (a.k.a. a style of food). Whether it be Italian, Asian, Southern, or Mexican, there is a theme with seasonings specific to it. Here’s a list to make choosing the right seasoning for your steak a little easier. But before you look, remember you do not have to use every single seasoning listed under a theme.
Tips to complement, not conquer.
Guidelines for seasoning steak are as unique to each foodie as a fingerprint. If you’re just getting started out with your grass fed steak, here are a few things to keep in mind:
Less is more. Grass fed steak has this decadent, full meat flavor to it. When you season it, do so with the belief that the steak is already perfect; you’re seasoning it to help it blend with the rest of the meal. The best way to season a steak is to use the less is more rule and let the seasonings accentuate the natural flavor of the beef.
One celebrity. Pick one seasoning to be your star seasoning. It will be the base of your theme, and all other seasonings are picked on the premise of highlighting it (and the meat). A good rule of thumb for the celebrity standard is one part star seasoning for every one part supporting seasonings (in their entirety…only one tablespoon of seasoning combined).
In other words, if your meal has an Italian theme, create a steak seasoning rub with garlic as your “star.” Mix together 1 tablespoon of minced garlic, with 1 tablespoon of rosemary, thyme, and sage combined (1/3 tablespoon of each).

Rub it like Buddha’s belly. When you are seasoning steak, add the wet ingredients to it first. Grab your dry ingredients, and rub them into the steak. They should easily stick to the wet ingredients. Place on a clean, dry plate (do not transfer any liquids that have dripped off), and let sit at room temperature for an hour. This achieves two things: your steak will be an even temperature throughout affording you an even cook, and the steak will have time to dry a bit before you throw it in a pan. If your steak is too wet, you won’t have a nice sear…you’ll have a steamed steak. After the initial hour of rest, the underneath will be slightly wet. This is ok. Simply cook dry side down first.
